Specifications and Conditions have been strictly set up including the production methods of the raw materials in direct relation with the implantation and the vine’s progress throughout the year. These different actions are supervised and controlled by the agents of the I.N.A.O as well as the members of the Wiremen’s Association designated at the heart of the Association. Their control is directly linked with the planting and training of the vines year round. Their control extends even to the heart of each vineyard plot. Extract from a letter by the INAO on the 02:07/02: “The Wisemens’ Commission for Vézelay’s Winegrowers’ Association have confirmed that each vine’s size conformed to the specifications laid down in current legislation and that the production conditions for the appellation ‘Bourgogne Vézelay’ were respected.” | | Finally, an annual tasting is planned, with the professional actors from the Chablisian and Auxerrois Wine World, at the end of which the appellation is given, or not. The quality aspect is fundamental to us when promoting our young appellation BOURGOGNE VEZELAY. Wines in the appellation are tested annually: the title of BOURGOGNE VEZELAY is not definitive. Respecting the raw material... Our harvest of Chardonnay is carried out manually and sorted, then transported in vats of 40 kgs. The grapes are produced by respecting biological alternatives with the work of the soil and the methods of reasoned protection. |
